WALLA WALLA SWEET ONION BACON SLICES

1 large Walla Walla Sweet Onion
1 package 8-ounce cream cheese, softened
1 cup browned bacon, cut or broken into small pieces
1 cup Walla Walla Sweet Onion chopped into small pieces
Salt & Pepper to taste

Place softened cream cheese in small mixing bowl. Add bacon and chopped sweet onion and mix together. Salt and pepper to taste.

Slice large Walla Walla Sweet Onion in half, midway between the stem and root ends, around the equator, so to speak, then slice root end and stem end to allow onion sections, or cups, to be removed from onion, lining them up according to size. Spread cream cheese mixture in each section of onion, and then restack together using every other size onion section.

When finished, there should be four sets of filled cup shapes instead of two halves. Refrigerate overnight and slice while cold. Serve on sandwiches or cut into triangles to serve on crackers. Can also make fine beef taco sauce and serve over onion.

SWEET ONION SALAD DRESSING

2 cups Walla Walla Sweet Onions, with 1 cup finely minced and set aside.
1 cup olive oil
1 cup vinegar
1 cup Parmesan cheese
1/3 cup bacon bits, set aside half of the 1/3 cup
1 teaspoon lemon juice
2 teaspoons garlic
2 teaspoons chopped oregano, dried or fresh
2 teaspoons parsley
2 teaspoons rosemary
1 teaspoon pepper
1 teaspoon salt
1/3 teaspoon sugar (optional)

Put all ingredients into blender, except the bacon bits and onions that were set aside. Blend 20 seconds. Add remaining onions and bacon bits (quick blend optional). Chill and serve. Cover cucumbers and onions with dressing.

For Cucumber and Onion Salad, cut up two large Walla Walla Sweet Onions and three large cucumbers.

The dressing can also be used on salads or pasta or as a marinade on chicken or beef.

Remember: all ingredients are fresh; shelf life is limited to three days in the refrigerator.

WW SWEET ONION & CREAM CHEESE CELERY

Celery stalks
1 package 8-ounce cream cheese, softened
1 medium Walla Walla Sweet Onion, chopped into small pieces

Wash and peel celery, dry and cut into 2- to 3-inch pieces. Mix cream cheese with chopped Walla Walla Sweet Onion. Spread cheese mixture into celery pieces and serve.

WALLA WALLA SWEET ONION PIE

3 cups Walla Walla Sweet Onions
4 eggs, beaten
1 /2 cups heavy cream
1 /2 cups grated Swiss cheese
? teaspoon Italian seasoning
1 9-inch pie crust
Unsalted butter

Slice onions in half, cut into rings and saut in unsalted butter until caramelized. Prepare piecrust in 9-inch pie pan. Put the sauted onions in pie pan. Beat eggs in cream and pour over onions. Top with Swiss cheese and garnish with Italian seasoning. Bake 30-35 minutes until done. Set for 10 minutes, and then serve.

If you plant a row with three seeds to the inch you can plant a row 55 feet long.
Won't these onions be planted too close together?
Yes. But you start thinning them when they are table green onion size and use them. Leave about four inches between plants so there is room for them to mature.

Where can you grow Walla Walla Sweet Onions?

The Walla Walla Sweet Onion will grow in other areas and give you an excellent eating onion. They just may not be as sweet as if they were grown in the Walla Walla valley.

How and when do I plant?

Most people will plant the seed in their gardens in September and October. Some will plant the seed or transplant the young plants in the spring. Onions for green or table use can be seeded until mid-July for fall use. Seedlings made in August will normally winter over for spring use. Onion sets can be planted any time during the fall and winter if the soil is well drained and workable.
